The flavors in this Pastrami are perfectly balanced! It is juicy, tender, and simply the best! The best thing about this is that you don’t need a smoker to cook it! You can just use a slow cooker and oven to do the trick for you! Try it now!
Ingredients:
4 pounds / 2kg good corned beef, with a thick fat cap
SPICE MIX:
1 tablespoon smoked paprika
2 tablespoons coriander powder
1 tablespoon brown sugar
2 tablespoons liquid smoke (optional)
4 tablespoons fresh coarsely ground black pepper
2 teaspoons onion powder
2 teaspoons garlic powder
1 1/2 teaspoons mustard powder
Directions:
Add all the ingredients for the spice mix onto a baking tray and whisk until well incorporated. Spread it evenly.
Use paper towels to pat dry the beef.
Put the beef on the tray with the spice mix. Rub it well until completely coated.
Double wrap the seasoned beef with aluminum foil, fat cap side up. Place it over the rack in a slow cooker.
Cover and seal the slow cooker, then cook the beef for about 10 hours on a low setting.
Remove the beef from the slow cooker, then place it in the fridge to cool for about 6 hours. Leave the juice in the slow cooker for later use.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Unwrap the beef, then put it back onto the tray.
Place it in the preheated oven and bake for half an hour. Remove from the oven, then slice it into thin pieces.\
Serve with the accumulated juice in the slow cooker. Enjoy!
Notes:
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 5 days. Reheat in the oven.
You can make this Pastrami into a steak sandwich, hamburger, etc.
