Ingredients:
1 teaspoon salt optional
1.5 pounds of sweet potatoes about 4 medium-sized potatoes
½ teaspoon pepper, optional
2 tablespoons olive oil, optional
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place the potatoes under running water, then rinse and scrub to remove any dirt. Use a fork to poke small holes around the potatoes.
Drizzle olive over the potatoes, then seasons them with salt and pepper. Rub each until fully coated.
Wrap each potato twice with foil and seal the ends.
Lay the wrapped potatoes onto a baking sheet.
Place the baking sheet in the preheated oven and bake the potatoes for about 45 minutes to 1 hour or until fork-tender.
Remove from the oven and allow the potatoes to rest for a few minutes at room temperature.
