I love cookies, and I have my favorites! And these insanely healthy oatmeal cookies are my go-to for healthy, indulgent cookies. These cookies have become a staple at home. They have a lovely chewy texture, perfectly sweet, with an amazing combo of banana and chocolate. Plus, these cookies are super easy to whip up!
You got to love these oatmeal cookies! They are insanely simple to make and you just need a bowl to prep this in under five minutes! The ingredients are pretty simple. This recipe is also adaptable. You can swap other ingredients or omit the chocolate chips if desired and replace them with some chopped nuts.
Ingredients
2 ripe bananas
1 flax egg 1 tbsp flaxseed meal plus 3 tbsp water
1 c. rolled oats – gluten-free if needed
1/2 c. quinoa flakes or more oats
2 tbsp unsweetened cocoa powder
1/4 c. mini chocolate chips
How to make Insanely Healthy Oatmeal Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees. Using non-stick cooking spray, grease a cookie sheet.
Step 2: Place the bananas in a small mixing bowl. Mash the bananas well, then add in the flax, seed followed by the rest of the ingredients. Mix well until everything is completely blended.
Step 3: On the prepared cooking sheet, spoon the cookie dough. Using the back of a spoon, gently flatten the cookie dough.
Step 4: Place in the preheated oven and bake for about 13 to 15 minutes or until the cookies are browned and only a little tender to the touch.
Step 5: Take the cookies out of the oven when done and onto a wire rack to cool fully.
Step 6: In a covered container, store the cookies for up to 2 to 3 days.
