Light, delicious, and super easy to make! Serve this Instant Pot Chicken Parmesan over spaghetti for a family-friendly meal. Or with roasted veggies for a light meal. This also pairs well with a light side salad.
Ingredients
2 large boneless, skinless chicken breasts
1 1/2 c. marinara sauce
4 garlic cloves, pressed
2 tablespoons olive oil
1 tablespoon fresh minced basil
1 c. shredded Mozzarella cheese
salt
cracked black pepper
1/2 tablespoon fresh minced basil
3 tablespoons grated Parmesan cheese
How to make Instant Pot Chicken Parmesan
Step 1: To make 4 thin chicken breast halves slice large chicken breasts in half, width-wise. Sprinkle both sides of the chicken with salt and pepper.
Step 2: Set the Instant Pot on “Saute”.
Step 3: To the pot, add some olive oil followed by the breast halves. Cook the chicken until the first side begins to brown. Then, flip and cook the other side until it begins to brown. Set the chicken aside.
Step 4: Into the now empty pot, add the garlic and saute until aromatic. Pour in the marinara sauce and mix well. Allow it to heat through, then turn the saute mode off.
Step 5: Into the pot, return the chicken, placing them in the center of the sauce.
Step 6: Close the lid and turn the valve to “Seal”. Set to cook for 3 minutes on Pressure cook (LOW).
Step 7: Once done, release the pressure carefully on the quick release.
Step 8: On top of each chicken half, add the mozzarella cheese, Parmesan cheese, and some basil. Close the lid and allow the cheese to melt for about 4 to 5 minutes (do not turn on the Instant Pot).
Step 9: When ready, serve the Chicken Parmesan immediately. Enjoy!
Note:
You can also use 2 large chicken breasts. Simply slice them in half. Or use 4 small chicken breasts (no need to cut them in half).
