Flavorful and tender green beans and potatoes topped with bacon. Put a pressure cooker twist to the popular Southern recipe with this easy Instant Pot Green Beans and Potatoes. Super easy to make and almost a hands-free dish you can throw together in less than twenty-five minutes. For this recipe, I like to use Yukon gold because they are smooth and soak in the flavor so well. Also, they have light and flaky skin.
These green beans and potatoes are the perfect side dish and excellent to pair with just about anything. A one-pot side dish great for any holiday dinner. Delicious, irresistible, and an amazing way to let the kids eat their veggies.
Ingredients
Olive Oil
1 Clove Garlic, minced
8 Slices Bacon, chopped
1/2 Red Onion, chopped
6-8 Potatoes, Small Yukon Gold, halved
2 lbs. Haricot Verts, Fresh – trimmed (or Green Beans)
1 tbsp Butter
3/4 c. Chicken Broth
Fresh Parsley, chopped
Salt and Pepper, to taste
How to make Instant Pot Green Beans and Potatoes
Step 1: Set the Instant Pot to Saute and the timer to 20 minutes. Add the bacon once hot and cook, stirring often, until crisp. To a paper towel-lined plate, transfer the bacon, leaving the grease in the Instant Pot.
Step 2: In the Instant Pot, add the onions and garlic. Saute until tender. Then, add the potatoes, cut side down, and cook until golden. If needed, add a drizzle of olive oil.
Step 3: Throw in the butter followed by the green beans. Stir well.
Step 4: Pour in the chicken broth. Set the Instant Pot to Manual, high pressure for 6 minutes.
Step 5: Once the timer is up, allow a natural release, then open the lid. To taste, season with salt and pepper. Add the bacon and stir to incorporate.
Step 6: Right before serving, sprinkle with some chopped parsley. Enjoy!
Note:
You can store any leftovers in the fridge for up to 3 to 4 days.
