Ingredients:
4 garlic cloves, minced
1/2 c honey
1/3 c soy sauce
3 tsp cornstarch dissolved in 1/4 c water
3-4 boneless, skinless chicken breasts
Salt and pepper to taste
1/4 c ketchup
Sesame seeds & green onion for topping
1/3 c onion, diced
2 tbsp vegetable oil
Rice for serving
Directions:
1. Add the chicken to the Instant Pot and arrange them in a single layer.
2. Sprinkle salt and pepper over the chicken to season.
3. Add soy sauce, ketchup, honey, garlic, onion, and oil into a mixing bowl. Stir until well mixed.
4. Pour the mixture on top of the chicken. Make sure to coat the chicken well.
5. Cover and seal the Instant Pot.
6. Cook the chicken for about 15 minutes on a high setting.
7. Transfer the chicken onto a clean plate.
8. Add 1/4 cup of water and 3 tsp of cornstarch into a mixing bowl. Stir until well blended.
9. Pour the slurry into the Instant Pot with the sauce, then stir until well blended.
10. Press the “Sauté” button, then cook the sauce for 5 minutes or until the texture becomes a bit thick.
11. Slice the chicken into small cuts, then put them back into the Instant Pot. Stir until well coated by the delicious sauce.
12. Sprinkle green onions and sesame seeds over each serving.
13. Serve over rice. Enjoy!
Note:
Try adding chili flakes to this dish for a spicy version.
