With the help of an Instant Pot, this recipe was made easy! In less than an hour, dinner is served! Mashed potatoes topped with meatloaf, what’s not to love? This is recipe is surely a must-try!
Ingredients:
Meatloaf:
1 c whole milk
1 tbsp Worcestershire sauce
2 large Eggs
1 onion (finely minced and divided)
1 tsp dried parsley
1 tsp Italian seasoning
1/4 c bread crumbs
4 cloves garlic (minced)
1 lb. ground beef (80 to 85 lean)
1 lb. ground pork
1/2 tsp black pepper (or to taste)
1/2 tsp ground paprika
1 c mozzarella cheese (cubed)
1 tsp kosher salt (or to taste)
Mashed Potatoes:
1/2 c sour cream
2 c chicken broth
1/2 c heavy cream
2 pounds Yukon potatoes (peeled and quartered)
salt and pepper (to taste)
2 tbsp butter (unsalted)
Meatloaf Glaze:
1 tbsp tomato paste
3 tbsp brown sugar
1/2 c BBQ sauce
1 tsp apple cider vinegar
1 tbsp yellow mustard
2 tbsp sweet chili sauce
1/2 c ketchup
1/4 c honey
Directions:
Add all the meatloaf ingredients into a large mixing bowl. Stir everything until well incorporated.
Form the mixture into an oval to make it fit in the Instant Pot.
With the use an aluminum foil, create a boat-like figure. Place the meatloaf in it.
Slice the peeled potatoes into small pieces, then lay them on the bottom of a 6-quart Instant Pot. Arrange them in a single layer.
Add the butter, broth, salt, and pepper. Place the trivet over the ingredients and place the meatloaf over it.
Cover and seal the Instant Pot, then cook the meatloaf for about 20 minutes on a high setting. Let the pressure release naturally.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Transfer the meatloaf onto a baking sheet.
In a mixing bowl, add all the ingredients for the glaze. Stir everything until well blended.
Pour 1/2 of the glaze over the meatloaf and spread it evenly.
Place the meatloaf in the preheated oven and bake for about 15 minutes.
Remove it from the oven and spread the rest of the glaze on top.
Put it back in the oven and bake for a few more minutes.
Add the mashed potatoes and cream into the Instant Pot. Mash and cook for a few minutes until the texture becomes smooth. Add sour cream, salt, and pepper. Stir until well blended.
Slice the meatloaf into even pieces.
Serve meatloaf over mashed potatoes. Enjoy!
Note:
Sprinkle freshly chopped parsley over each serving to garnish.
