Ingredients:
1/4 cup orange marmalade
1 tablespoon cornstarch at end to thicken the sauce when chicken is done
2 cups barbecue sauce – do not use honey style as there is too much sugar and may display a burning message
1/4 cup water or chicken broth
2 chicken breasts boneless, skinless, bite-size pieces, can double the recipe if you want 4 breasts
1/2 onion cut into large pieces – optional
3 tablespoons soy sauce
chives or green onion to garnish
Directions:
1. Slice the chicken breasts into small pieces.
2. Put soy sauce, chicken, BBQ sauce, onion, and chicken broth into the Instant Pot.
3. Stir everything well blended until the chicken pieces are well coated.
4. Seal the Instant Pot, then press the “Pressure” button and cook the chicken on a high setting for about 4 minutes.
5. Open the lid and do a quick release.
6. Press the button “Sauté” on your Instant Pot.
7. In a small mixing bowl, add the cornstarch, and a few tablespoons of the sauce from the pot. Stir until well blended.
8. Pour the cornstarch mixture into the Instant Pot. Stir until well blended.
9. Pour in the marmalade and stir for about 2 minutes or until well blended.
10. Serve over rice. Enjoy!
Notes:
Sprinkle your preferred herbs on top to garnish.
