If you are looking for an easy weeknight meal, this Instant Pot Balsamic Glazed Pork Tenderloin is a must! Tender sliced meat glazed with a simple thick, and sweet balsamic glaze. Serve this with mashed potatoes or veggies on the side to round up your meal.
3 cloves garlic, pressed
2 tbsp olive oil
2 pork tenderloins (about 2 lbs. total)
2 tsp Italian seasoning
1 ¼ c. water, divided
2 tbsp soy sauce
¼ c. balsamic vinegar
2 tbsp cornstarch
½ c. light brown sugar, packed
1 tsp kosher salt
½ tsp black pepper
How to make Instant Pot Pork Tenderloin
Step 1: Mix the salt, pepper, and Italian seasoning in a small bowl. All over the tenderloins, rub the olive oil and sprinkle with the seasoning mix.
Step 2: To saute, set the pressure cooker. Then, add the pressed garlic along with the tenderloins. Cook the meat, turning every 1 to 2 minutes (total of 6 minutes) until browned. Set the meat aside.
Step 3: Pour in 1 cup of water and deglaze the pot. Scrape any browned bits from the bottom using a wooden spoon while still on saute. Then, press cancel.
Step 4: To the pot, add the soy sauce, brown sugar, and balsamic vinegar. Stir well. Return the pork tenderloins to the Instant Pot. Lock the lid and set the venting valve to sealing.
Step 5: Set to high pressure for 10 minutes.
Step 6: Let a natural release for pressure for 10 minutes once done before turning the valve to venting, then quickly release the pressure. Take the lid off and transfer the pork to a cutting board.
Step 7: Turn the Instant Pot to saute while the pork rests on the cutting board.
Step 8: Whisk the cornstarch and 1/4 c cold water in a small bowl. Stir this into the pot and cook for another 2 minutes, stirring constantly until thick and bubbly.
Step 9: Before serving, slice the pork tenderloin and drizzle with the balsamic glaze. Enjoy!
The pork is done once the internal temperature reaches at least 145 degrees F.
