I was blown away by this Irish Apple Cake! I am so glad that I gave this recipe a try because I never would have tasted perfection! All the ingredients complement with each other to make such a delicious cake!
Ingredients:
Cake:
1 teaspoon cinnamon
1/2 c (or 100 grams) granulated sugar
3 tablespoons (or 45 ml) whole milk or cream
2 large Eggs
1 1/4 c (or 150 grams) of all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 c (or 113 grams) of unsalted butter at room temperature
confectioner’s sugar for dusting
About 3 Granny Smith apples, peeled and thinly sliced. Mine weighed a little over a pound after slicing
Streusel Topping:
6 tablespoons (or 85 grams) of unsalted cold butter, cut into small pieces
3/4 c (or 96 grams) of all-purpose flour
1/4 c (or 25 grams) old fashioned rolled oats
1/2 c (or 100 grams) granulated sugar
Custard Sauce:
1 1/2 teaspoons vanilla
1 1/2 c (or 375 ml) whole milk ~ you can also use half and half or cream
6 large Egg yolks
6 tablespoons (or 76 grams) of granulated sugar
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to a 9-inch springform pan.
Custard Sauce:
1. Place a pan with milk on the stove and turn the heat to medium. Bring to a simmer.
2. Add sugar and egg yolks into a mixing bowl. Whisk until mixed.
3. Pour the hot milk into the bowl with the egg mixture, then whisk until well blended and smooth.
4. Add vanilla, then stir until well blended.
5. Transfer the custard into a heat-safe bowl through a sieve.
6. Wrap the bowl with plastic, then place it inside the fridge to chill.
Streusel Topping:
1. Add sugar, oats, butter, and flour into a mixing bowl. Whisk until well incorporated. Put the bowl inside the fridge.
2. In a separate mixing bowl, add sugar and butter. Beat until well incorporated.
3. Add eggs gradually into the bowl with the butter mixture, then beat every addition until well blended.
4. In a separate mixing bowl, add salt, cinnamon, baking powder, and flour. Whisk everything until well blended.
5. Transfer the dry ingredients into the bowl with the butter mixture together with milk and stir until well mixed.
6. Pour the batter into the prepared pan and spread it evenly.
7. Add the apple slices on top of the batter in a single layer.
8. Spread the streusel topping over the apple slices.
9. Place it inside the preheated and bake for about 50 to 1 hour or until done. Remove from the oven.
10. Cool the cake at room temperature.
11. Sprinkle confectioners’ sugar on top of the cake.
12. Serve and enjoy!
