Ingredients:
1/2 c shredded mozzarella or parmesan cheese
8 ounces penne pasta or any shape you have on hand, cooked al dente
1/4 c onion chopped
1 c large diced bell peppers–I mixed red and green
1 c cooked diced chicken
6 cooked Italian sausage links cut in 1/4-inch slices
2 tablespoons shredded Asiago cheese
2 c shredded pizza cheese
26 ounces jar spaghetti sauce (you can use more if you like a saucy casserole)
Directions:
1. Prepare the oven and preheat to 162 degrees C or 325 degrees F.
2. Apply cooking spray in a 2-quart baking dish. You can also use an 11×7-inch baking dish.
3. Add the mozzarella cheese, cooked pasta, onion, bell peppers, chicken, sausage, and spaghetti sauce into a large mixing bowl. Toss everything until well combined.
4. Transfer the mixture into the prepared baking dish and spread it evenly.
5. Add the Asiago cheese and shredded pizza cheese over the mixture in the baking dish.
6. Place it inside the preheated oven and bake for about 45 minutes or until the top turns golden brown.
7. Remove from the oven and allow it to rest for a few minutes at room temperature.
8. Sprinkle your preferred herbs on top to garnish.
9. Serve and enjoy!
