Enjoy the Italian dining experience at home with this easy, yet scrumptious Italian Chicken Pasta in Creamy White Wine Parmesan Cheese Sauce!
2 tbsp olive oil
4 thin boneless, skinless chicken breasts (or 2 thick ones, halved horizontally and paper towel dried)
½ c. flour
1 tsp garlic powder
2 tsp Italian seasoning
1 tsp salt
¼ tsp black pepper
12 ounces of spaghetti
White Wine, Parmesan Sauce:
4 garlic cloves, minced
4 tbsp butter
1 small yellow onion (or use ½ onion), chopped
2 scallions, chopped
1 c. heavy cream
1 c. white wine
1 tbsp flour
½ c. Parmesan cheese, shredded
1 tsp Italian Seasoning
2 small tomatoes, diced
¼ tsp crushed red pepper flakes
½ tsp salt, more to taste
How to make Italian Chicken Pasta in Creamy White Wine Parmesan Cheese Sauce
Step 1: To make the chicken breasts thin, slice them horizontally. Alternatively, you can just use chicken breasts. Make sure to pat the chicken dry using a paper towel.
Step 2: Place the flour, salt, black pepper, garlic powder, and Italian seasoning in a large bowl. Mix well. In the flour mixture, coat the chicken breasts, pressing them down using a fork or tongs. Flip and coat the other side. Set aside.
Step 3: In a large skillet, heat 2 tbsp olive oil on medium-high heat. Add the flour-coated chicken breasts to the hot skillet and sear for about 4 to 5 minutes per side until cooked through and golden brown. Set the chicken aside when done.
Step 4: To make the sauce, add the butter, diced yellow onion, and minced garlic cloves to the pan and cook for about 2 minutes over medium-high heat until the onions and garlic are translucent. Then, add the chopped scallions and tomatoes followed by 1 tbsp flour. Stir well until combined. Pour in the heavy cream and wine. Toss in the Italian seasoning, salt, and red pepper flakes. Bring everything to a simmering point before adding half a c. of shredded Parmesan cheese. Mix well using a whisk or wooden spoon until the mixture is smooth.
Step 5: According to the package directions, cook the pasta in boiling salted water until al dente. Drain when done but do not rinse.
Step 6: To assemble, add the cooked pasta to the skillet and toss it to coat in the sauce. Cook for 2 to 4 minutes over low heat. If needed, season with salt. Top the pasta with the chicken and cook for another 5 minutes until warmed through.
Step 7: Serve the pasta with the chicken on the side or top with the chicken and sprinkle with Parmesan cheese. Enjoy!
