12 oz. egg noodles
1 lb Italian sausage
1 orange pepper, diced
1 red pepper, diced
1 yellow pepper, diced
4 clove garlic, minced
1 can(s) diced tomatoes with juice (28 ounces)
2 tbsp parsley
1/4 c. basil, fresh
1/2 c. white wine (such as chardonnay)
Fresh Parmesan cheese, optional
1 1/2 tsp salt
1 tsp Italian seasoning
1/2 tsp black pepper
HOW TO MAKE ITALIAN DRUNKEN NOODLES
Heat 2 tbsp olive oil in a large pot over medium-high heat. Once hot, add the spicy Italian sausage. Cook and crumble into small chunks until browned.
Into a small mixing bowl, transfer the sausage.
Place the bell peppers, Italian seasoning, salt, and pepper in the now-empty pot and cook for about 2 minutes or until the bell peppers have softened. Next, add the garlic and continue to cook until fragrant.
Pour in the white wine and cook further until reduced.
Now, add the diced tomatoes along with the olive oil and chopped basil. Mix well, then drizzle in 3 tbsp olive oil.
Next, add the cooked sausage, chopped parsley, and 1/2 of the Julienned basil. Let everything simmer for about 3-4 minutes.
Take the pan off the heat and ready the noodles.
Following the package directions, cook the egg noodles. Drain when done and toss the noodles into the sauce. Stir well using tongs until completely incorporated.
Into serving bowls, spoon the noodles and sprinkle with the remaining Julliened basil. Then, drizzle with extra olive oil. Enjoy!
