Simple, delicious, and very easy! These three words best describe my experience with this Italian Sausage and Peppers! In just about an hour, this is ready to be devoured. Enjoy!
Ingredients:
20 ounces sweet Italian sausages, (5 sausages)
¼ c olive oil
1 green bell pepper, sliced
2 tbsp chopped fresh parsley
¼ c tomato paste (4 tablespoons)
1 yellow bell pepper, sliced
1 14.5 ounces can of diced tomatoes
½ c red wine, on the drier side
½ tsp salt
2 large basil leaves, chopped
1 red bell pepper, sliced
1 large onion, sliced
½ tsp ground black pepper
½ tsp dried thyme
5 cloves garlic, minced
1 tsp dried oregano
Directions:
Add a large pan to the stove and turn the heat to medium.
Lay the sausages into the pan, then cook them for a few minutes until brown. Move the sausages to a clean plate.
In the now empty pan, add olive oil and allow it to become hot.
Add the peppers and onion slices, then sauté for a few minutes until soft.
Add garlic, then sauté for a minute or until aromatic. Season with salt and pepper.
Add the tomato paste into the pan, then cook for a minute to remove the raw taste.
Pour in the wine, then scrape the bottom to get the browned bits. Stir again until well blended. Simmer the mixture for about 3 minutes.
Add the tomatoes, thyme, oregano, and parsley. Stir until well incorporated.
Slice the sausages into 5 pieces, then put them into the pan and toss until well combined.
Cover the pan with the lid and cook for another 20 to 30 minutes.
Add the basil leaves and stir until well blended.
Serve right away over pasta. Enjoy!
