Loaded with tender chicken pieces, mushrooms, bacon, and spinach smothered in a delectable cream sauce. This Keto Chicken Cheese Bake is an amazing weeknight meal perfect for even your picky eaters!
INGREDIENTS
1 store-bought cooked rotisserie chicken – meat removed and chopped into bite-sized pieces
1 lb. bacon
8 oz. package of cream cheese
1 1/2 c. sharp cheddar cheese, shredded
1/2 c. grated Parmesan cheese
1/3 c. avocado mayonnaise
1 c. heavy cream
1 tbsp fresh garlic, minced
8 oz. baby spinach
1 tsp dry mustard
1/2 tsp white pepper
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp garlic powder
1 1/2 c. red onion, diced
1/2 tsp hot sauce – I used Cholula
2 c. mozzarella cheese, shredded
8 oz. baby Bella mushrooms, sliced
How to make Keto Chicken Cheese Bake
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Cook the bacon in a large skillet until crisp. Transfer to paper towels, setting aside 3 tbsp of bacon fat.
Step 3: In the meantime, place the cream cheese, Parmesan cheese, cheddar cheese, avocado mayonnaise, heavy cream, hot sauce, mustard, pepper, garlic powder, onion powder, and paprika in a medium saucepan. Cook while stirring using a wooden spoon over medium heat until creamy.
Step 4: Once the bacon has cooled, crumble them and add it to the cream mixture.
Step 5: Clean the skillet, then add 2 tbsp of the bacon grease. Add the onions and saute for about 3 minutes over medium-high heat. Add the rest of the bacon fat and toss in the mushrooms. Saute for another 5 minutes. Next, add the garlic along with the spinach. Stir well and continue to cook for additional 2 minutes until the spinach has wilted.
Step 6: Now, add the cream mixture, followed by the cooked chicken. Heat until warmed through. Then, transfer everything into an 8 x 12-inch casserole dish. On top, sprinkle 2 cups of mozzarella cheese.
Step 7: Place in the preheated oven and bake for about 20 minutes. Then, for 1 to 2 minutes under the broiler.
Step 8: Before serving, allow the dish to sit for about 10 minutes. Enjoy!
