Ingredients
2 cloves Garlic, minced
1 pound Grass-Fed Ground Beef, cooked and drained (I used ButcherBox)
10.75 ounces Can Cream of Mushroom Soup
2 c. Frozen Riced Cauliflower
1/2 onion, diced
Salt & Pepper, to taste
2 c. Shredded Cheddar Cheese
How to make Keto Tater Tot Casserole
Step 1: Place the cauliflower rice in 2 microwave bags and cook in the microwave. Into a colander over the sink, empty the bag once the cauliflower rice is cooked.
Step 2: Combine the cooked ground beef with onion, garlic, cream of mushroom soup, and salt and pepper until just mixed. Then, spread this into the bottom of a lightly greased 9-inch baking dish. On top, sprinkle 1 c. of the shredded cheddar, then drained cauliflower. Season with salt and pepper, then sprinkle the rest of the cheese on top.
Step 3: Place in the oven and bake for about 35 to 40 minutes or until the cauliflower begins to brown and the cheese has melted.
Step 4: Remove from the oven when done, and serve the casserole right away. Enjoy!
