This is a killer chicken thigh marinade recipe. This is super simple to make using just a few readily available ingredients. This marinade has wonderful Asian flavors. This uses maple syrup and Worcestershire sauce that adds sweetness, extra flavor, and balance to this marinade. This recipe is my favorite chicken thigh marinade. The best part is this marinade is also a perfect base to create baked Asian chicken and honey garlic baked chicken which is my family’s favorite!
To get the best results, make sure to marinade the chicken thighs for up to 24 hours for intense, deep, and complex flavors. This also ensures tender and juicy meat. If short of time, marinating for at least 30 minutes will do the trick.
Ingredients
2 tablespoons olive oil
1 tablespoon sesame oil
8 bone-in, skin-on chicken thighs (about 4 pounds)
4 tablespoons low-sodium soy sauce
2 tablespoons lemon juice (or lime juice)
6 cloves garlic (minced)
½ teaspoon black pepper (freshly ground)
1 tablespoon Worcestershire sauce
2 teaspoons kosher salt (plus more to taste)
5 tablespoons maple syrup (or honey)
How to make Killer Chicken Thigh Marinade
Step 1: In a large bowl or a plastic ziplock bag, place the marinade ingredients. Mix well, then add the chicken. Coat the chicken well. Place in the fridge for at least 30 minutes to 2 hours to marinate. I prefer marinating overnight for better results.
Step 2: Prepare the oven. Preheat it to 450 degrees F.
Step 3: In a baking dish, transfer the chicken (skin side up) along with the marinade. Place in the preheated oven and bake for about 25 to 30 minutes until the internal temperature of the chicken reaches 165 degrees F. Baste the chicken in the juices, about 15 to 20 minutes into baking to ensure the tops of the chicken are nicely browned and prevent the chicken from drying out.
Step 4: Broil the chicken in the last 2 to 3 minutes of baking to get a nicely browned, crisped-up skin.
