Ingredients:
1/4 c olive oil
4 garlic cloves, minced
10 to 12 chicken drumsticks
2 tablespoons fresh lemon zest
1/4 c fresh lemon juice
1 teaspoon dried oregano
2 tablespoons fresh parsley, minced
Sea salt and freshly ground black pepper
1 teaspoon paprika (optional)
Directions:
1. Add all the ingredients into a mixing bowl aside from the drumsticks. Stir until well mixed.
2. Rub the chicken with salt and pepper. Make sure to coat them well.
3. Arrange the chicken drumsticks into a large container. Pour the marinade on top of the chicken and toss until well coated.
4. Cover the container and allow the chicken to marinate for at least 2 hours or 8 hours.
5. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
6. Remove the chicken from the marinade and transfer them into a baking dish. Make sure to leave a small space between each chicken.
7. Place them inside the preheated oven and bake for about 30 minutes or until done. Make sure to flip the chicken halfway through the baking time.
8. Remove from the oven and garnish with freshly chopped parsley on top.
9. Serve and enjoy!
