Ingredients:
Graham Cracker Crust:
⅔ c butter, melted
2⅔ c graham crackers crumbs
⅓ c organic sugar
Lemon Cheesecake:
1¼ c sugar
3 tablespoons lemon juice, freshly squeezed
3 Eggs
2 tablespoons grated lemon peel
24 ounces cream cheese
Blueberry Topping:
1 teaspoon vanilla
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
For the Graham Cracker Crust:
1. Add sugar and graham cracker crumbs into a mixing bowl. Whisk until well blended.
2. Add melted butter into the bowl with the graham mixture, then stir until well blended.
3. Transfer the mixture to a 13×9-inch baking dish and press towards the bottom.
4. Place it inside the preheated oven and bake for about 15 minutes or until done.
5. Remove the crust from the oven and let it rest at room temperature.
For the Lemon Cheesecake:
1. Add the cracked eggs into a mixing bowl. Whisk until creamy.
2. Add sugar and cream cheese into a large bowl. Beat until well blended and creamy.
3. Add eggs and beat until well blended.
4. Add vanilla, lemon juice, and grated lemon peel. Stir until well mixed.
5. Transfer the lemon cheesecake mixture into the prepared crust and spread it evenly.
6. Place it inside the preheated oven and bake for about 45 minutes.
7. Remove the cheesecake from the oven and allow it to cool for at least 10 minutes at room temperature.
8. Place it inside the fridge to chill for at least 6 hours or overnight.
For the Blueberry Topping:
1. Add the topping on top of the cheesecake and spread it evenly.
2. Slice into even squares.
3. Serve and enjoy!
