Ingredients:
For the Chicken:
1 egg
½ tsp Black Pepper
1 c Parmesan packed, grated fine
2-3 tbsp Butter
½ tsp Salt
1 tsp Italian Seasoning or Oregano
⅓ c All-purpose Flour
3 pieces of Chicken Breasts
1 tbsp Olive Oil
For the Sauce:
Juice of one Lemon
1 tbsp Butter
½ c White Wine
To Garnish:
Lemon Slices
Parsley, fresh
Directions:
Chicken:
Slice the chicken breast into two cuts from top to bottom. Wrap each slice with a cling, then use a meat mallet to gently pound it.
Add Italian seasoning, black pepper, flour, and salt into a shallow bowl. Whisk everything until well combined.
In a separate mixing bowl, crack an egg and whisk a few times.
In another bowl, add the grated Parmesan cheese.
Dredge and coat each chicken with the flour mixture, egg, and Parmesan cheese. Remove any excess.
Place the coated chicken breasts into a baking dish. Leave a small space between each chicken.
Place a skillet on the stove and turn the heat to medium-high. Add butter and olive oil.
Add the chicken into the hot skillet, then cook each side for a few minutes until they golden brown. Transfer the chicken onto a clean plate.
Sauce:
In the same skillet, add 1 tbsp of butter and allow it to melt.
Add the white wine into the skillet, then scrape the bottom to get the browned bits.
Add the lemon juice and stir until well blended. Reduce the heat to low and simmer the sauce for a couple of minutes.
Remove the skillet from the heat.
Bring the chicken breasts back into the skillet, then toss until coated with the sauce.
Sprinkle freshly chopped parsley on top to garnish.
Serve with lemon slices on the side. Enjoy!
Notes:
Feel free to use oregano instead of Italian seasoning.
You can use your favorite wine for this recipe.
