Ingredients:
1 pound shrimp (not frozen, needs to be thawed)
2 tbsp butter (or coconut oil)
1 tbsp garlic salt
1/2 c chicken broth (or you can use water)
1 lemon (freshly squeezed)
8 ounces angel hair pasta
freshly grated parmesan cheese
2 tbsp fresh parsley
salt and pepper to taste
Directions:
1. Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
2. Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add butter and allow it to melt.
5. Season the shrimp with garlic salt, salt, and pepper.
6. Add the shrimp into the hot skillet and cook each side for 4 minutes or until they turn pink.
7. Add the chicken broth and lemon juice, then stir until well blended. Allow the mixture to simmer.
8. Add the Parmesan cheese and freshly chopped parsley. Stir until well blended.
9. Add the drained pasta and toss until well coated by the delicious sauce.
10. Remove from the heat, then sprinkle more Parmesan cheese on top.
11. Garnish with freshly chopped parsley.
12. Serve and enjoy!
Note:
I always serve this with green beans or broccoli.
