Lemon Pie is my mom’s favorite. She always asks for it whenever she visits. It is incredibly easy to throw together with a Graham cracker crust filled with a perfectly sweet, lemon-flavored filling, then topped with homemade whipped cream topping. Ingredients
Lemon Pie:
6 tbsp salted butter, melted
1 1/2 c. crushed Graham crackers (about 27 squares)
3 egg yolks
1/3 c. sugar
3 c. sweetened condensed milk
2/3 c. fresh lemon juice
pinch of salt
lemon zest
lemon slices
Whipped Cream Topping:
2 tbsp sugar
1 tsp vanilla extract
1 c. heavy cream
How to make Lemon Pie
Step 1: Prepare the oven. Preheat it to 350 degrees. Using a vegetable spray, lightly grease a pie plate.
Step 2: Place the crushed Graham crackers and sugar in a large bowl. Mix well until then whisk in the melted butter until completely incorporated.
Step 3: Into the bottom of the prepared pie plate, press the cracker mixture. Put inside the preheated oven and bake the crust for about 8 minutes.
Step 4: Place the sweetened condensed milk, egg yolks, lemon juice, and salt in a medium bowl. Beat with a handheld mixer until well blended. Into the baked pie crust, pour the mixture. Then, resume baking for another 10 minutes until the middle of the pie is set.
Step 5: Remove from the oven when done, and let the pie cool for about 30 minutes on a cooling rack. Then, transfer to the fridge and chill for at least 1 hour.
Step 6: To make the whipped cream topping, place the cream, sugar, and vanilla in a medium bowl. Beat using a handheld mixer on high until fluffy. Spread this over the cooled pie just before serving and garnish with the slices of lemon and lemon zest. Enjoy!
