Ingredients:
2/3 c vegetable oil
1/2 tsp baking soda
1 1/2 teaspoons baking powder
3 large Eggs
1 1/4 c sifted all-purpose flour
1 1/2 c sifted cake flour
1 teaspoon good quality vanilla extract
1 1/2 c sugar
1/3 c vegetable shortening at room temperature
zest of two small or one large lemon, grated and finely chopped
1 1/2 c buttermilk
2 teaspoons pure lemon extract
1 tsp salt
For the Frosting
4 c icing sugar, powdered sugar
1 c unsalted butter
1 teaspoon pure lemon extract
1 teaspoon minced lemon zest, optional
2 tablespoons milk, approximately
Directions:
1. Prepare the oven and preheat to 325 degrees F or 162 degrees C.
2. Apply cooking spray in two 9-inch round cake pans.
3. Sprinkle flour over the greased pans.
4. In a mixing bowl, add baking powder, flour, sugar, baking soda, and salt. Sift until well mixed.
5. Add the vanilla, shortening, lemon extract, and vegetable oil into the bowl of your electric mixer. Beat until well blended.
6. Add the eggs gradually and beat every addition until well mixed.
7. Add the lemon zest and stir until well blended.
8. Add the buttermilk and dry ingredients alternately, then beat every addition until well mixed.
9. Fill each of the prepared cake pans with the mixture.
10. Place them inside the preheated oven and bake for about 30 to 35 minutes or until a toothpick comes out clean after inserting it in the middle.
11. Remove from the oven and allow them to cook completely at room temperature.
For the Frosting:
1. Add the lemon zest, butter, and icing sugar into a mixing bowl. Stir until well blended.
2. Add a bit of milk and lemon extract. Stir until well blended.
3. Frost the warm cake, then top with the candied lemon zest.
For the Candied Lemon Zest:
1. Peel the lemon and get the zest.
2. Place a pan with 1 cup of sugar and water on the stove, then turn the heat to medium and allow the mixture to boil.
3. Add the lemon zest and allow it to boil for 15 minutes.
4. Drain and allow the zest to cool completely.
5. Slice the zest into small pieces, then toss them with sugar.
