Enjoy a delightful, very comforting weeknight dinner that you can easily make using just a few simple ingredients. Get this Linguine with spinach and sun-dried tomato cream sauce ready in no more than thirty minutes. It’s creamy and delicious, perfect to serve by itself or with seafood or grilled chicken. This linguine also is excellent with fresh salad and Baguette or Italian garlic bread.
Ingredients
3 cloves garlic, minced
8 ounces linguine
⅓ c. sun-dried tomatoes, chopped
1 c. half-and-half
¼ tsp paprika
6 ounces spinach
1 c. Parmesan cheese, shredded
5 basil leaves, fresh, finely chopped
¼ tsp salt
How to make Linguine with spinach and sun-dried tomato cream sauce
Step 1: Following the package directions, cook the linguine. Drain when done and set aside.
Step 2: In a large skillet, heat tbsp olive oil over medium heat. Once hot, add the chopped sun-dried tomatoes and minced garlic. Cook while stirring constantly for about 30 seconds over medium heat.
Step 3: Next, pour in the half-and-half and add the paprika and 1/4 tsp salt. Bring the mixture to a boil. Once boiling, decrease the heat to a simmer.
Step 4: Sprinkle with half a c of the shredded Parmesan cheese and stir for 30 seconds or so until the cheese has melted. Slowly add extra cheese if the sauce ends up too thin. Constantly stir for a few minutes. Or more half-and-half if the sauce is too thick.
Step 5: Fold in the spinach and cook while stirring for another minute over medium heat until the spinach has wilted. Then, toss in the cooked and drained linguine.
Step 6: If needed, season with more salt. Before serving, garnish with some finely chopped fresh basil leaves. Enjoy!
Note:
You can swap a cup of half-and-half with a mixture of a half cup each of whole milk and heavy cream.
