Easy and delicious casserole loaded with baked potatoes, chicken, bacon, and cheese. This is a comforting, creamy casserole that will win everyone’s hearts!
Ingredients
1/3 c. Olive Oil
2 pounds of chicken breast
8 potatoes
2 tablespoons Garlic Powder
1 tablespoon Paprika
6 tablespoons Hot Sauce
1 1/2 teaspoons salt
1 tablespoon fresh Ground Pepper
Toppings:
1 c. crumbled Bacon
1 c. diced Green Onion
2 c. Shredded Cheese
How to make Loaded Baked Potato Chicken Casserole
Step 1: Prepare the oven. Preheat it to 500 degrees F.
Step 2: Combine the salt, pepper, olive oil, hot sauce, and garlic in a big bowl until well mixed.
Step 3: Into small cubes, cut the potatoes and place them in the bowl. Let the potatoes marinate for 10 minutes.
Step 4: Drain the potatoes in another bowl, using a strainer, saving the remaining sauce in a separate bowl.
Step 5: Using cooking spray, grease a baking dish.
Step 6: In the baking dish, evenly spread the potatoes. Place in the preheated oven and bake for about 45 minutes, stirring the potatoes every 15 minutes.
Step 7: Meanwhile, dry the bacon. Set aside to drain.
Step 8: Brown the chicken in the bacon grease. Then, add to the remaining sauce. Toss well to evenly coat the chicken.
Step 9: Once the potatoes are done, top them with the chicken. Continue baking for another 12 minutes.
Step 10: In the meantime, crumble the bacon, then grate the cheese, and chop the green onions. On top of the chicken, layer the cheese, followed by the bacon and half of the green onions. Bake for additional 3 to 5 minutes to melt the cheese.
Step 11: Before serving, garnish the casserole with fresh green onions. Enjoy!
Notes:
Tent any leftovers with foil and refrigerate. Before eating, reheat in the microwave or oven.
If desired, you can add other herbs or spices to taste.
