Super comforting, easy and quick to make, and delicious! This loaded cauliflower casserole with cream cheese, sour cream, sharp cheddar, Monterey Jack, bacon, and chives is another amazing side dish option that even your fussiest eaters will adore! This is a low-carb, family-friendly dish that pairs well with just about anything!
Ingredients
1 clove of garlic, minced
2 pounds Fresh cauliflower florets
8 ounces shredded Monterrey Jack cheese, divided
8 ounces shredded sharp cheddar cheese, divided
4 tablespoons heavy cream
8 ounces block cream cheese, softened
1½ c. green onions, sliced
½ teaspoon Salt
Freshly ground black pepper
6 slices of bacon, cooked and crumbled
HOW TO MAKE LOADED CAULIFLOWER CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Ready the cauliflower florets. Steam until tender.
Step 3: Whisk 6 ounces of shredded cheese, 6 ounces of Monterrey Jack, all of the cream cheese, and heavy cream. Then, add the sliced green onions, chopped bacon, and garlic. Mix well until blended and set aside.
Step 4: When done, drain the steamed cauliflower florets. Add the florets to the cheese mixture and fold well. To taste, season with salt and pepper.
Step 5: Into a 3-quart casserole dish, pour the cauliflower florets mixture and sprinkle with the rest of the 2 ounces of cheddar and Monterrey Jack. Using foil, tent the dish.
Step 6: Place in the preheated oven and bake for about 25 minutes. Uncover and resume baking until the cheese is bubbly.
Step 7: When done, remove the casserole from the oven and serve immediately. Enjoy!
Tips:
For this recipe, you can use frozen instead of fresh cauliflowers. Cook the same, then drain.
You can also blanch the cauliflower instead of steaming them. Place them in boiling water and blanch for about 5 minutes.
To stop the cooking process, immediately soak them in ice or running water.
Make this casserole in advance and tent it with plastic wrap. Keep it in the fridge. Before reheating, let it warm on the tabletop for about 30 minutes.
