Slow cooker recipes are a lifesaver! They make life easier. This Loaded Slow-Cooker Potatoes recipe is one of my ultimate favorite slow cooker recipes. It’s insanely easy to make using just simple ingredients. A almost hands-free recipe you can make at any time. These loaded potatoes can easily feed a crowd. They are excellent for the Holidays or as a delicious, cheesy addition to your weeknight meal.
These loaded potatoes are an awesome base for a variety of toppings and variations. My favorite is to top these potatoes with cheese, bacon, and green onions. But you are welcome to top them with anything you like! Some pickled jalapenos are an amazing option if you want a bit of heat. Or fold in some blue cheese crumbles before serving to make this a little funky. I’m sure we all love classic garlic and herbs. Whichever you want to top these potatoes, I’m pretty sure it’ll be a hit!
2 pounds baby potatoes, halved and quartered if large
3 cups shredded Cheddar
8 slices bacon, cooked
2 cloves garlic, thinly sliced
1/4 cup sliced green onions, plus more for garnish
1 tablespoon paprika
Sour cream, drizzling
Freshly ground black pepper
How to Make Loaded Slow-Cooker Potatoes
Step 1: Using foil, line a slow cooker and grease it with cooking spray.
Step 2: In the slow cooker, add half of the potatoes followed by 1 1/4 c. cheese, half the garlic, 1/3 of the cooked bacon, half the green onions, and half the paprika. To taste, season with salt and pepper. Do the same layers with the remaining ingredients.
Step 3: Cover with the lid and set to cook for 5 to 6 hours on high until the potatoes are tender. Note that if using bigger potatoes, the cooking time will take longer.
Step 4: Top with the rest of the cheese and bacon about 20 to 30 minutes before serving.
Step 5: Before serving, garnish the loaded slow cooker potatoes with extra green onions, then drizzle with sour cream. Enjoy!
