I love breadsticks, but these Low Carb Cauliflower Breadsticks are better than the traditional ones! These indulgent breadsticks are made with cauliflower with tons of melted cheese and fresh herbs. Serve these impressive Low Carb Cauliflower Breadsticks with your favorite red sauce for dipping or enjoy as a side dish to any Italian meal. These cauliflower breadsticks are crazy good, even your picky eaters will devour them!
Ingredients
1/2 c. mozzarella cheese, shredded
1 large egg
1 head cauliflower
1/2 tbsp garlic, minced
1/2 tbsp fresh Italian flat-leaf parsley, chopped, plus more for garnish
1/2 tbsp fresh basil, chopped, plus more for garnish
3/4 c. mozzarella cheese, shredded
Marinara sauce for dipping
1 tsp salt
1/2 c. Parmesan cheese, shaved, plus more for garnish
1/2 tsp black pepper
How to make Low Carb Cauliflower Breadsticks
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using a silicone mat or parchment paper, line a baking sheet.
Step 2: Core the cauliflower, then cut it into florets. In a bowl of a food processor, place the florets and pulse until the texture is like rice.
Step 3: Place the riced cauliflower, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, egg, garlic, basil, parsley, salt, and pepper in a large bowl. Mix well until blended and the mixture holds together.
Step 4: Onto the prepared baking sheet, place the cauliflower mixture, evenly spreading it out to approximately 9 x 7 inches and 1/4 inch thick.
Step 5: Place in the preheated oven and bake for about 10 to 12 minutes. Then, take the dish out of the oven and sprinkle 3/4 c of the shredded mozzarella cheese on top. Resume baking until the cheese has melted and begins to brown.
Step 6: Let the dish cool for about 10 minutes before cutting it into ‘breadsticks’. Serve garnished with some fresh herbs and extra Parmesan cheese. Enjoy with your preferred red sauce!
