1 large eggplant
1 tbsp olive oil
1/2–1 c no sugar added pizza sauce*
2 garlic cloves, minced
1/2 yellow onion, sliced
1 c fresh baby spinach
sea salt, to taste
ground pepper, to taste
3/4 c shredded mozzarella cheese
¼ c chopped fresh oregano
crushed red pepper (optional)
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Slice the eggplant into 1/4-inch thickness.
Step 3: Apply olive oil all over the eggplant slices.
Step 4: Line with parchment paper a baking sheet.
Step 5: Place the eggplant slices into the prepared baking sheet, then season them with salt and pepper.
Step 6: Place the baking sheet inside the preheated oven and bake the eggplant for 10 minutes or until done.
Step 7: Place a skillet on the stove and turn the heat to medium.
Step 8: Add 1/2 tablespoon of olive oil and allow it to become hot.
Step 9: Add the garlic and sauté until aromatic.
Step 10: Add the spinach and pizza sauce. Stir and cook for 2 minutes or until done.
Step 11: Remove the eggplant from the oven.
Step 12: Fill each slice with the sauce, then sprinkle a generous amount of cheese and oregano on top.
Step 13: Bake for 5 more minutes or until the cheese has melted completely.
Step 14: Serve warm and enjoy!
