This pizza casserole is a delicious keto, gluten-free casserole filled with all your favorite pizza flavors! The best part is you can enjoy this without the guilt!
INGREDIENTS
1 tbsp Olive Oil
2 lbs. Italian Sausage, if in casings removed before cooking
14 oz. Cauliflower florets, cut into bite-size pieces
2.5 oz. Pepperoni
1 tsp Italian Seasoning
8 oz. Mushrooms, sliced
1 Green Pepper, cut into bite-size pieces
1/4 c. Parmesan cheese, powdered
12 oz. Mozzarella cheese, shredded
1.5 c. Low-Carb Pasta Sauce – we use Rao’s Homemade Marinara
HOW TO MAKE LOW-CARB PIZZA CASSEROLE
Step 1: In a microwave-safe bowl with 1 cup of water, place the cauliflower. Using a damp towel, cover the bowl and microwave the cauliflower for about 3 minutes on high until tender. Make sure not to overcook the cauliflower. Drain when done and pat them dry with a paper towel. Set the cauliflower aside.
Step 2: Prepare the oven. Preheat it to 400 degrees F.
Step 3: Cook the Italian sausage in a large skillet over medium-high heat for about 15 minutes. Drain the excess grease when done and set the sausage aside.
Step 4: Saute the mushrooms in the same skillet in olive oil for about 10 minutes over medium-high heat to get rid of the excess water. Set the mushrooms aside when done.
Step 5: Using cooking spray, grease a 13 x 9-inch casserole dish. On the bottom, spread half c. of the pasta sauce.
Step 6: Place the cauliflower, cooked Italian sausage, mushrooms, and green peppers in a large bowl. Mix well.
Step 7: In the casserole dish, spread half of the mixture, then top with half of the pasta sauce, then half of the pepperonis, and 6 oz mozzarella cheese.
Step 8: On top of the cheese, spread the rest of the toppings. Then, top with pepperonis (reserving 10 slices for later), the rest of the half c. pasta sauce, and 6 oz mozzarella cheese.
Step 9: Combine the Parmesan cheese and Italian seasoning in a small bowl until well mixed.
Step 10: On top of the casserole, sprinkle the Parmesan mixture, followed by the reserved pepperoni.
Step 11: Bake in the preheated oven for about 30 minutes or until the cheese has melted and the casserole is cooked through.
