This was by far the best recipe I have tried this week! I am sure that you are going to love it that’s why I decided to share this recipe with you! Oh, man, you are so in for a treat!
Ingredients:
2 tbsp butter
1 c chicken stock
1 c heavy cream (double cream in the UK)
3 cloves garlic minced
⅓ c sundried tomatoes chopped
2 tbsp olive oil
6 tbsp all-purpose flour
¼ tsp oregano
3 large boneless and skinless chicken breasts sliced into thin cutlets
½ c parmesan cheese grated
1 tbsp fresh basil leaves
¼ tsp ground black pepper
1 tbsp chilli flakes
¼ tsp thyme
½ tsp salt
Directions:
1. Sprinkle salt and pepper over the chicken breasts, then rub each until well coated.
2. Coat each with flour and remove excess.
3. Place a large skillet on the stove and turn the heat to medium.
4. Add butter and oil, then allow them to become hot.
5. Add the chicken, then cook each side for about 5 minutes or until they turn golden brown. Move the chicken onto a clean plate.
6. In the empty skillet, add garlic and sauté until aromatic.
7. Pour in chicken stock, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
8. Reduce the heat to medium-low, then add Parmesan cheese and heavy cream. Stir until well blended. Simmer the sauce for a few minutes.
9. Add oregano, salt, pepper, chilli flakes, and thyme. Stir until well blended.
10. Add the sundried tomatoes and chicken into the skillet, then toss until well mixed. Simmer everything for another 2 minutes, then remove from the heat.
11. Sprinkle freshly chopped basil over each serving to garnish.
12. Serve over rice or pasta. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days.
