Mexican shredded beef tacos are one of my family’s favorites! I have been making this for years, and I cannot still get over how delightful this is! Making this in the crock pot makes this easier to make. I whip this up all year round. This Mexican shredded beef is excellent for busy days.
The best thing about this recipe is you can just set it and forget it. Come dinner time, you just need to assemble it. Wrap it up in tortillas and top it with your favorite taco toppings. This also makes an excellent on-the-go meal.
To make this recipe, all it requires are a couple of simple, readily available ingredients. Place all the ingredients in your crock pot and set to cook either on low or high. Serve this savory Mexican shredded beef on tortillas, and add the optional toppings (or any of your favorite toppings) on top. And enjoy a mouthwatering meal that everyone will ask for over and over again!
Ingredients
3 pounds beef chuck roast
1 white onion, diced
4 ounces tomato paste
1 c. beef broth
1 teaspoon ground cumin
1/2 teaspoon salt
1 tablespoon ground mild chili powder
Optional/Toppings:
Cotija cheese
12 tortillas
diced onions
Cilantro
How to make Mexican Shredded Beef Tacos
Step 1: In a 6-quart Crock Pot, place the onions. On top, lay the chuck roast.
Step 2: In a measuring cup, place the beef broth, tomato paste, and seasonings. Mix well until combined.
Step 3: Over the chuck roast, pour the broth mixture. Cover and set to cook for 4 hours on high or 8 hours on low.
Step 4: Shred the cooked meat using two forks in the tomato and broth mixture.
Step 5: On tortillas, place the beef and top with the optional topping or any of your favorite toppings. Enjoy!
