Super easy to make and the best casserole you’ll ever make! This chicken casserole has been one of my favorite go-tos for years. This is made with simple ingredients combined to make a million-dollar casserole.
I love recipes that I can easily and quickly make. The ones I can throw together ahead of time and freeze or refrigerate for later. This million-dollar chicken casserole fits the bill. The perfect weeknight dinner with chicken, cream cheese, cottage cheese, sour cream, onion, garlic, and cream of chicken soup topped with crushed Ritz crackers and butter. This casserole brings our dinner to heights. To round up your meal, serve this casserole with green beans or crusty bread.
This casserole, as I mentioned, is an amazing make-ahead and freezer meal. If desired, you can double the recipe and freeze or refrigerate the other for later. Before serving, thaw the frozen casserole in the fridge overnight, then bake as instructed.
INGREDIENTS
1 c. cottage cheese
1/2 c. sour cream
4 c. cooked chicken, chopped
4 ounces cream cheese, softened
1/2 tsp garlic powder
1 (10.75 ounces) can cream of chicken soup
1/2 tsp onion powder
1/2 tsp dried parsley
6 tbsp butter, melted
1 sleeve of Ritz crackers, crushed
How to make Million Dollar Chicken Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a nonstick spray, grease a 9-inch baking dish.
Step 2: Place the cream cheese in a medium bowl. Beat until smooth. Then, add the cottage cheese, sour cream, garlic powder, onion powder, parsley, and cream of chicken soup. Beat again until well blended.
Step 3: Fold in the chicken. Into the prepared baking dish, transfer the mixture.
Step 4: Combine the cracker crumbs and butter, then sprinkle this on top of the chicken mixture.
Step 5: Place in the preheated oven and bake for about 30 to 40 minutes or until the casserole is golden brown and bubbly.
