Refreshing and very satisfying. This Zucchini cake is my new obsession! I am sure that it will be yours too! Enjoy!
3 cups flour
1 cup of sugar
1 cup brown sugar
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 teaspoon baking powder
2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
3 cups grated zucchini
1 1/4 cup vegetable oil
1 teaspoon vanilla extract
3/4 cup chopped walnuts
BROWN SUGAR CREAM CHEESE FROSTING:
12 ounces cream cheese (1 1/2 boxes)
4 tablespoon unsalted butter softened
3 tablespoon light brown sugar
2 teaspoon vanilla extract
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking dish.
Step 3: In a medium mixing bowl, add the flour, brown sugar, sugar, baking powder, salt, baking soda, allspice, nutmeg, and cinnamon. Whisk until well mixed.
Step 4: In another mixing bowl, add the grated zucchini, eggs, vanilla extract, and vegetable oil. Stir until well mixed.
Step 5: Transfer the flour mixture into the zucchini mixture and stir until well combined.
Step 6: Add in chopped walnuts and stir until well mixed.
Step 7: Transfer the batter into the prepared baking dish and spread it evenly.
Step 8: Place it inside the preheated oven and bake for 40 to 55 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 9: Remove from the oven and allow it to cool at room temperature.
Step 10: In a medium mixing bowl, add the butter, cream cheese, vanilla, and brown sugar. Use an electric mixer to mix until fluffy.
Step 11: Spread the frosting over the cooled cake.
Step 12: Place the cake inside the fridge to chill.
Step 13: Serve and enjoy!
