Ingredients:
5 cloves garlic, minced
1 jalapeño, seeded and diced
2 tbsp corn starch
3 scallions, thinly sliced
1 tbsp cooking oil
1-inch piece of ginger, peeled and diced
1 lb. flank steak, sliced into 1/4-inch-thick strips
Sauce:
1/2 c brown sugar
2 tsp cornstarch
1/2 c low-sodium soy sauce
Directions:
In a mixing bowl, add the flank steak and cornstarch. Toss until beef is covered with starch.
In another mixing bowl, put all the ingredients for the sauce. Stir until well incorporated.
Place a pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the ginger and jalapeno, then sauté for a few minutes until aromatic and soft.
Add the beef and garlic, then cook for about 5 minutes or until brown and aromatic.\
Add the sauce, then stir until well blended. Simmer the mixture for about a minute or until the sauce becomes thick. Turn off the heat.
Scatter the scallions on top and stir everything until well incorporated.
Serve hot. Enjoy!
Notes:
Make sure to use thin slices of steak to cook it fast.
You can use any type of sugar for this recipe.
If you want this dish to be spicy, try adding the seeds of the jalapeno.
Serve this with white rice, zucchini noodles, cauliflower rice, or roasted veggies.
