Ingredients:
Olive oil, for frying
3 eggs, beaten
1 cup panko bread crumbs
1 teaspoon dried oregano
8 ounces of fresh mozzarella
1 cup all-purpose flour
1/2 teaspoon garlic powder
1-pound boneless, skinless chicken breasts
1/4 cup thinly sliced basil
2 tablespoons chopped parsley
1/2 cup freshly grated Parmesan, divided
2 cups marinara
Kosher salt
Freshly ground black pepper
Directions:
Prepare the oven and preheat to 425 degrees F.
Run a knife into each chicken breast to make a deep slice. Stuff each chicken with mozzarella cheese and gently press it to seal. Sprinkle salt and pepper over the stuffed chicken breasts.
Add eggs, panko bread crumbs, and flour to individual bowls.
Add 1/2 tsp salt, 1/4 cup Parmesan cheese, dried oregano, and garlic powder into the bowl with the Panko bread crumbs.
Whisk until well incorporated.
Coat each stuffed chicken with flour, egg, and crumbs. Shake off any excess.
Place a large skillet on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Add the stuffed chicken breasts into the hot skillet, then cook all sides for 4 minutes or until they turn golden brown.
Add marinara sauce beside the chicken, then sprinkle it with freshly chopped basil.
Remove the skillet from the heat, then sprinkle Parmesan cheese over the chicken. Allow it to completely melt.
Place the skillet in the preheated oven and bake the chicken for 20 minutes or until done.
Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
