This recipe has always been a part of my family since I was a little kid. I remember my grandma used to make this all the time! She was a very skilled chef and I learned a lot from her including this New England Baked Cod! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! As perfect as this recipe already is, feel free to add more ingredients if you wish. I am sure that you can do a lot to make this very simple recipe even better! Ingredients:
3 tablespoons unsalted butter, melted
1 sleeve Ritz crackers, crushed lightly (you could use less, but I like lots of crumbs)
1-2 tablespoons unsalted butter, room temperature (for the casserole dish)
1 pound cod (or any white, flaky fish)
Juice of 1 lemon
Kosher salt
Freshly ground black pepper
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Rinse the fish with water, then use paper towels to pat them dry.
3. Slice the fish into medium cuts.
4. Brush a casserole dish with melted butter.
5. Rub each slice of fish with salt and pepper.
6. Arrange the fish slices into the prepared casserole dish.
7. In a mixing bowl, add melted butter and crushed cracker. Stir until well mixed.
8. Sprinkle the mixture on top of the fish.
9. Place the dish inside the preheated oven and bake the fish for about 30 minutes or until done.
10. Remove from the oven and let them rest at room temperature.
11. Squeeze lemon juice over the fish.
12. Serve and enjoy!
