Every year around the holidays, I make a batch of no-bake chocolate peanut butter haystacks to pass around. With just four ingredients, you can make a deliciously crunchy and sugary treat.
Since I’ve been cooking haystacks since I was a teenager, I don’t even know where I got the recipe. In fact, I’m quite sure that I prepared this as my very first-ever Christmas treat for my new family. Without fail, every year, I make them.
There are only four simple components needed to prepare these No-Bake Peanut Butter Haystacks. I have been known to substitute butterscotch chips for chocolate chips on occasion. But this time around I used both milk chocolate and peanut butter chips in the recipe. Do you agree that chocolate and peanut butter go together like chocolate and peanut butter?
Moreover, they hold their shape well when frozen. Each year during the holidays, I prepare a large quantity and save some in the freezer for later. I don’t always wait for them to defrost before eating them frozen. This is the best treat you could ever give to everyone!
INGREDIENTS
1 c. creamy peanut butter
1 (5-ounce) can of crispy chow mein noodles
1/2 c. salted peanuts (optional)
1 (11 ounces) package of butterscotch chips
How to make No-Bake Peanut Butter Haystacks
Using wax paper, line a baking sheet and set aside.
Melt the butterscotch chips and peanut butter in a large pot over medium-low heat, stirring until smooth.
Take the pot off the heat.
Into the pot, add the chow mein noodles and peanuts (if using). Quickly toss to coat.
Onto the wax paper, drop the mixture by spoonfuls, making sure to work quickly.
Allow the haystack to cool until set.
Serve and enjoy!
