Oatmeal Peanut Butter Cookies

Prep Time: 30 mins | Cook Time: 10 mins | Total Time: 40 mins | Servings: 12 | Yield: 2 dozens

These cookies are superb! I love how all the ingredients complement each other to make the perfect batch of cookie sandwiches. Try it now and enjoy!

Ingredients:

¾ c all-purpose flour
½ tsp baking soda
¼ tsp baking powder
½ tsp salt
½ c butter softened
½ c peanut butter
½ c white sugar
½ c packed light brown sugar
1 Egg
1 tsp vanilla extract
1 c quick-cooking oats
3 Tbsp butter, softened
1 c confectioners’ Sugar
½ c smooth peanut butter
2 ½ Tbsp heavy whipping cream

Directions:

Step 1: In a large mixing bowl, add ½ cup butter or margarine, white sugar, peanut butter, brown sugar, and vanilla. Stir until well blended.

Step 2: Add in the egg and beat until well mixed.

Step 3: In a separate mixing bowl, add the baking powder, flour, baking soda, and salt. Whisk until well mixed.

Step 4: Transfer the flour mixture into the creamed mixture. Stir until well combined.

Step 5: Add in oatmeal and stir until well blended.

Step 6: Spoon the mixture on a sprayed baking sheet and gently press each mound using a fork until ¼-inch thick.

Step 7: Place it inside the oven and bake for 10 minutes at 350 degrees F or until the colour turns light brown.

How To Make the Filling:

Step 1: In a small mixing bowl, add in 3 tablespoons of margarine/butter, ½ cup peanut butter, cream, and confectioners’ sugar. Stir until well combined.

Step 2: Spread the filling over half the cooled cookies and top each with the other half to make a sandwich.

Step 3: Serve and enjoy!
