Ingredients:
For pork roast marinade:
3 tbsp oil
2 minced cloves of garlic
1 tsp crushed thyme
5 lbs. pork loin roast, boned
¼ c soy sauce
1/3 c ketchup
2 tbsp Dijon mustard
2 tbsp balsamic vinegar
1 tbsp dry mustard
1 c Coca-Cola
1 tsp ginger
½ c dark brown sugar
2 tbsp Worcestershire sauce
Coca-Cola Sauce:
2 tbsp butter
1/3 c balsamic vinegar
1 c brown sugar
2/3 c Coca-Cola
1 tbsp cornstarch
Sea salt and fresh ground pepper
½ tsp dry mustard
Directions:
For the Roast:
In a mixing bowl, add all the marinade ingredients. Stir everything until well blended.
Add the roast inside a large resealable bag, then pour in the marinade. Seal the bag and shake it until the roast is completely covered with the marinade.
Transfer the contents of the bag into a large mixing bowl. Cover it with plastic, then place it in the fridge. Marinate the roast for about 24 hours.
Prepare the oven and preheat it to 325 degrees F.
Remove the bowl from the fridge. Transfer the roast to a pan. You can throw away the marinade.
Place the pork in the preheated oven and roast for about 2 1/2 hours to 3 hours.
Transfer the roast onto a clean serving plate, then cover it with foil to keep it warm. Allow it to rest for at least 15 minutes at room temperature.
Slice the roast into even servings.
For the Sauce:
In a saucepan, add all the ingredients for the sauce.
Place the pan on the stove and turn the heat to low. Stir and simmer the sauce for a few minutes until it becomes thick.
Serve with the roast. Enjoy!
