Ingredients:
3 1/2 oz. (100g) bacon
3 1/3 ounces (10cl) olive oil
5 ounces (15cl) of white wine
1/2 tsp salt
2 1/2 c (250g) all-purpose flour
4 Eggs
1 tsp of baking powder (about 5g)
1 large onion
7 oz. (200g) city ham, already cooked
5 oz. (150g) grated Swiss cheese or cheddar
3 1/2 oz. (100g) green olives
2 tbsp chopped parsley
3 1/2 oz. (100g) black olives
Directions:
1. Prepare the oven and preheat to 360 degrees F or 180 degrees C.
2. Add the eggs, wine, salt, and oil into a large mixing bowl. Whisk until well mixed.
3. In another mixing bowl, add the baking powder and flour. Whisk until well mixed.
4. Transfer the flour mixture into the bowl with the egg mixture. Whisk until well mixed.
5. Place a skillet on the stove and turn the heat to medium.
6. Add the bacon and cook until crispy.
7. Finely chop the onion, then add them into the skillet. Sauté until soft.
8. Remove the bacon from the skillet onto a clean plate lined with paper towels to drain any excess grease.
9. Slice the ham, parsley, and olives.
10. Add everything into the bowl with the egg mixture. Stir until well combined.
11. Brush with melted butter in a 9×5-inch loaf pan.
12. Transfer everything into the prepared loaf pan and spread it evenly.
13. Place it inside the preheated oven and bake for about an hour or until done.
14. Remove from the oven and allow it to cool for a few minutes at room temperature.
15. Serve and enjoy!
