This black pepper chicken is an amazing one-pan dish that your family will surely love! Incredibly easy to make and ready in a breeze. This black pepper chicken has been one of my favorites. Tender, juicy chicken with crisp vegetables in a rich savory black pepper sauce. This homemade version is way better than Chinese restaurant takeout!
This black pepper chicken is a regular on our menu rotation. Not only that this is insanely easy and quick to put together, but this is super delicious and packed with healthy lean protein and colorful veggies! Serve this over rice for a simple, filling meal any time!
Ingredients
2 tbsp olive oil
1-1/2 lbs boneless, skinless chicken breasts, cut into cubes
1” fresh ginger root, peeled and finely chopped
1 red bell pepper, seeded and cut into strips
2 cloves garlic, peeled and finely minced
3 tbsp white vinegar, divided
1 tbsp coconut palm sugar or honey
3 tbsp lite soy sauce, divided (optional, coconut aminos, Tamari or Bragg Liquid Aminos)
1-1/2 tsp freshly ground black pepper
How to make One-Pot Black Pepper Chicken
Step 1: Place half of the soy sauce, vinegar, and sweetener in a medium bowl. Mix well until combined. Then, toss in the chicken. Keep in the fridge for about 30 minutes to marinate the chicken.
Step 2: Into a skillet, heat the oil over medium-low. Once hot, add the garlic and ginger. Saute for about 30 seconds until just the garlic is aromatic.
Step 3: To the skillet, add the marinated chicken with any juices in the bowl. Continue to cook for another 3 minutes. Next, add the bell pepper strips along with the rest of the soy sauce and vinegar. Season with black pepper. Stir well and cook for additional 10 minutes or until the peppers are tender and the chicken is completely cooked.
Step 4: Remove from the heat when done and serve the chicken over or alongside quinoa or brown rice. Enjoy!
