Ingredients:
3 ½ c shredded cheddar cheese, at room temp. Separated.
2 cloves garlic, minced
1 (16 ounces) box elbow macaroni, uncooked
2 tsp Worcestershire sauce
2 tbsp tomato paste
1 pound Ground Beef, 85% lean
1 small yellow onion, diced
¾ c sour cream, at room temp
Chopped Parsley, to garnish
½ c whole milk, at room temp
Salt/Pepper, to taste
4 c beef broth
Directions:
Shred the cheese and put them into a mixing bowl. Let the cheese sit at room temperature.
Place a large pot on the stove and turn the heat to medium.
Add the ground beef into the pot, then cook for a few minutes until crumbly and brown. Season it with salt and pepper to taste.
Add the onions, then sauté for a few minutes until soft. Remove excess grease from the skillet.
Add minced garlic, then sauté for about a minute or just until aromatic.
Add tomato paste and Worcestershire sauce. Stir and cook for a minute to remove the raw taste of the tomato paste.
Add the uncooked macaroni and beef broth into the pot, then stir until just mixed.
Reduce the heat to medium-low, then simmer the mixture for a few minutes.
Cover the pot with the lid, then cook for 5 more minutes.
Remove the lid, then stir until well blended.
Put the cover on and cook for 5 more minutes or until the macaroni noodles are al dente.
Turn the heat down to low, then add 1/2 of the milk and sour cream. Stir until well blended.
Gradually add about 2 1/2 cups of shredded cheddar cheese, then stir every addition until well blended. Simmer until completely melted.
Sprinkle the rest of the cheese on top together with freshly chopped parsley.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to 2 days. Reheat for a few minutes before serving again.
