This casserole is a classic one! I learned how to cook this a couple of years ago. Since then, I’ve been cooking it for my family. They love it! It has rice, meat, cheese, and a lot more! A total complete meal that can feed up to 5 people. Try this recipe now!
Ingredients:
3 c chicken broth or water (750ml)
1 1/2 teaspoon coriander
400g (13 ounces) chicken breast, about 1/3-inch/1cm thick, sliced horizontally into thin steaks
1 1/2 c frozen corn (250g)
1 red bell pepper/capsicum, diced
680g (24 ounces) tomato passata or crushed canned tomatoes
2 teaspoons cumin
1/2 teaspoon cayenne pepper (spicy – adjust to taste)
2 teaspoons onion powder
1 1/2 c (270g) white rice (short, medium, or long-grain, uncooked
3 cloves garlic, crushed
1 tablespoon olive oil
1 tablespoon brown sugar
Salt and pepper
1-1 1/2 c grated cheese (about 125-150 g)
1 small onion, diced
1 tablespoon dried oregano
TO SERVE:
Chopped cilantro/coriander optional
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.
Add the chicken into the skillet, then cook each side for a few minutes or until they turn brown. Transfer the chicken onto a clean plate.
In the empty skillet, add a bit of oil and allow it to become hot.
Add the garlic and onion, then sauté for a few minutes until aromatic and translucent.
Add the bell peppers, then sauté for a few minutes until soft as well.
Add the rest of the ingredients aside from the cheese and rice. Stir and simmer.
Stir in the rice, then cover the skillet with a lid. Reduce the heat to medium-low and cook the rice for 15 minutes or until done without stirring.
Use two forks to shred the chicken into small pieces. Stir them into the skillet and top with cheese.
Broil for a few minutes until the cheese turns golden brown.
Remove from the oven, then sprinkle freshly chopped coriander or cilantro on top to garnish.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
