This easy one-pot dish is a combination of my two favorite comfort foods – chili and Mac & cheese. A great mini one-pot meal that is an amazing addition to your family’s menu rotation. Incredibly easy to make and ready in less than thirty minutes. I am pretty sure that your family will love this chili Mac and cheese as much as we do!
INGREDIENTS
8 oz. ground beef
2 cloves garlic, minced
1 onion, diced
1 tbsp olive oil
4 c. chicken broth
1 14.5-oz. can of diced tomatoes
¾ c. canned kidney beans – drained and rinsed
¾ c. canned white kidney beans, drained and rinsed
2 tsp chili powder
1 ½ tsp cumin
¾ c. shredded cheddar cheese
10 oz. elbow macaroni
2 tbsp chopped fresh parsley leaves
Kosher salt and freshly ground black pepper, to taste
HOW TO MAKE ONE POT CHILI MAC AND CHEESE
Step 1: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Once the oil is hot, add the garlic, onion, and ground beef to the skillet. Cook for about 3 to 5 minutes until the beef is no longer pink, breaking the beef up as it cooks. Then, drain the excess grease.
Step 2: To the skillet, add the chicken broth along with tomatoes, beans, chili powder, and cumin. Stir well and season with salt and pepper. Bring everything to a simmer, then toss in the pasta. Bring to a boil. Once boiling, decrease the heat, put the lid on, and simmer for another 13 to 15 minutes until the pasta is completely cooked.
Step 3: Take the pot off the heat and sprinkle the cheese on top. Replace the lid and let it sit for about 2 minutes until the cheese has melted.
Step 4: Serve the chili mac and cheese right away. If desired, garnish with some parsley. Enjoy!
