Crazy flavorful and an easy and quick one-pot casserole loaded with your favorite Mexican flavors! This casserole is chock-full of beef, rice, corn, and loads of taco flavor!
Enjoy your favorite restaurant-style Mexican rice at home with this easy recipe. The best part is this has been turned into a hearty meal that you can easily throw together in minutes! This casserole has been my family’s favorite for years. I love how I can easily put this together in a single pot! Serve this casserole with a dollop of sour cream and a side of salsa for a delicious Mexican-style dinner.
Ingredients
1 Small Onion, Diced
1 lb. Ground Beef
2 tbsp Taco Seasoning
1 tsp Garlic Powder
1 ½ c. Beef Broth
1 c. Long Grain White Rice
1 15-oz. Can Corn, Drained
1 c. Shredded Cheese
8 oz. Tomato Sauce
½ c. Salsa
Salt & Pepper, To Taste
How to make One Pot Mexican Rice Casserole
Step 1: In a large skillet, place the ground beef and onion. Season with salt and pepper. Cook over medium-high heat until the meat is brown. If needed, drain the grease.
Step 2: Place the pan back on the stove and sprinkle the beef with garlic powder and taco seasoning.
Step 3: Then, add the rice, broth, corn, tomato sauce, and salsa. Stir until all the ingredients are combined.
Step 4: Bring everything to a boil. Once boiling, put the lid on and decrease the heat. Let the mixture simmer for about 18 to 20 minutes or until the rice is tender.
Step 5: On top, sprinkle the cheese. Cover the skillet again to melt the cheese. This takes about 2 to 3 minutes.
Note:
In this recipe, I use long-grain white rice. Although, you are welcome to use the instant rice you have available on hand. Remember that instant rice cooks for 5 to 7 minutes until tender.
