This one-pot taco spaghetti is super comforting, cheesy, and delicious! Enjoy all your favorite taco flavors in spaghetti form. Throw this casserole together with pretty much no work and clean-up!
This taco in pasta form is seriously easy to make. The ingredients are dumped right in the pot, including the uncooked spaghetti. Also, the tomatoes do not need to be drained as the liquid is important to help cook the pasta. Before serving, sprinkle the cheese on top. Let the cheese melt, and the spaghetti is ready! This one-pot taco spaghetti could not get any simpler! And this comes together in less than thirty minutes!
INGREDIENTS
1 lb. ground beef
1 tbsp olive oil
1 1.25-oz. package of taco seasoning
1 tbsp tomato paste
1 10-oz. can Ro*Tel® Mild Diced Tomatoes & Green Chilies
½ c. shredded cheddar cheese
½ c. shredded mozzarella cheese
8 oz. spaghetti
2 tbsp chopped fresh cilantro leaves
1 Roma tomato, diced
HOW TO MAKE ONE POT OF TACO SPAGHETTI
Step 1: In a large stockpot or Dutch oven, heat the olive oil on medium-high heat. Once hot, add the ground beef and cook for about 3 to 5 minutes until the beef has browned, breaking the meat as it cooks. Then, stir in the taco seasoning. When done, drain the excess grease.
Step 2: Add the Ro*Tel®, tomato paste, spaghetti, and 3 c. water. Stir well and bring the mixture to a boil. Put the lid on and decrease the heat. Let everything simmer for another 13 to 16 minutes until the pasta is cooked through.
Step 3: Take the pot off the heat and top the spaghetti with the shredded cheddar and mozzarella cheese. Replace the lid for about 2 minutes to melt the cheese.
Step 4: Serve the taco spaghetti right away. If desired, garnish with tomato and cilantro. Enjoy!
NOTE:
Ground beef can be replaced with ground chicken or pork.
