Are you looking for a great chilled side dish for spring cookouts or summer parties? This Oriental Ramen Broccoli Cole Slaw is an amazing option! Sweet, tangy, and crunchy – this salad will surely become a hit at your next get-together!
Ingredients
Salad:
2 (8 oz.) packages of broccoli slaw mix
2 (3 oz. ) packages of beef or oriental flavor ramen noodles – packets removed, and noodles, crushed a bit (you still want to have some clumps)
1 c. sunflower seeds
1 bunch of green onion, chopped
1 c. slivered almonds – toasted
Dressing:
3/4 c. olive oil
1/2 c. sugar
1 seasoning packet from the Ramen
1/3 c. white vinegar
How to make Oriental Ramen Broccoli Cole Slaw
Step 1: In a single layer, place the slivered almonds on a cookie sheet. Place in the oven and bake for about 5 minutes at 350 degrees F until lightly browned. Remove from the oven when done and allow the toasted slivered almonds to cool.
Step 2: Layer the ramen noodles, broccoli slaw, almonds, sunflower seeds, then green onions in a large bowl. Set aside.
Step 3: In the meantime, mix the dressing ingredients and pour this over the salad.
Step 4: Cover the salad and keep it in the fridge for less than 24 hours to chill.
Step 5: Remove from the fridge and toss the salad. Serve and enjoy!
Notes:
You can use peanuts or cashew in place of almonds.
Swap white vinegar with wine vinegar for the dressing.
You can use Bottled Asian Ginger Dressing in place of the simple dressing in this recipe. Or make the dressing recipe and add a couple of dashes of sesame oil, fresh lime juice, crushed garlic, soy sauce, and chopped fresh cilantro.
If desired, add either sliced grilled or pan-seared chicken on top. Or toss in rotisserie chicken.
For a great variation, toss a handful or two of Cold Edamame into the salad.
If you do not have green onions, red onions are an amazing substitute.
