Ingredients:
6 bacon slices
4 boneless skinless chicken breasts, pounded to 1/2-inch thickness
2 tablespoons Mayonnaise
1/3 c honey
2 c shredded Colby/Jack cheese
1/4 c regular mustard
1 c sliced fresh mushroom (I omitted because my family does not like mushrooms)
2 tsp dried onion flakes
Lowry’s Seasoning Salt
Directions:
1. Coat the chicken breasts with the seasoning salt.
2. Place the chicken breasts into a bowl, then cover them with plastic wrap. Place them inside the fridge to chill for at least 30 minutes.
3. Meanwhile, place a large skillet on the stove and turn the heat to medium.
4. Add the bacon slices, then cook until greasy and crispy.
5. Remove the crispy bacon slices from the skillet and transfer them onto a clean plate.
6. In the same skillet with the bacon grease, add the seasoned chicken and cook each side for about 5 minutes.
7. Remove the chicken from the skillet and transfer them into a 9×13-inch casserole dish.
For the Honey Mustard:
1. Prepare the oven and preheat to 350 degrees F or 175 degrees C.
2. Add mayonnaise, honey, dried onion flakes, and mustard into a mixing bowl. Stir until well combined.
3. Top each chicken with Honey Mustard, mushrooms, crumbled bacon, and a generous amount of shredded cheese.
4. Place them inside the preheated oven and bake for about 30 minutes or until the cheese is melted completely.
5. Remove from the oven and let them rest for a few minutes.
6. Serve warm with the rest of the Honey Mustard Sauce. Enjoy!
