This Oven Baked Chicken and Rice is a complete meal with tender, buttery rice and juicy & flavor-packed chicken. A filling dinner option that you can easily make at any time.
2 cloves garlic (large), minced
5 bone-in chicken thigh fillets, peel skin OFF
1 onion, chopped (brown, white, or yellow)
2 tablespoons (30 grams) butter (or olive oil)
1 1/4 c. (315 ml) water, hot (tap is fine)
1 1/2 c. (375 ml) chicken broth/stock, hot
1 1/2 c. (270 grams) uncooked white rice
1/2 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon garlic powder
3/4 teaspoon salt
1 teaspoon paprika powder
Fresh thyme leaves or finely chopped parsley
How to make Oven Baked Chicken and Rice
Step 1: Prepare the oven. Preheat it to 180 degrees C or 350 degrees F.
Step 2: In a 10 x 15-inch or 25 x 35 cm baking dish, scatter the onion and garlic. In the center, place the butter. Bake in the preheated oven for about 12 minutes, then stir if some bits are browning too much.
Step 3: In the meantime, combine the chicken rub ingredients and sprinkle this on all sides of the chicken.
Step 4: Take the baking dish out of the oven and stir in the rice. Over the rice, place the chicken, and pour the chicken broth and water around.
Step 5: Tent the dish with foil. Return to the oven and bake for another 30 minutes. Then, remove the foil and grease the chicken with oil. This is optional but recommended if you want to give the chicken a nicer finish. Continue baking for additional 20 minutes or until the liquid has been absorbed.
Step 6: Let the dish stand for about 5 minutes before taking the chicken out. Fluff the rice and garnish the oven-baked chicken and rice, garlic with thyme, or parsley. Enjoy!
